Its Fascinating how natural things, when allowed to be natural, live and grow into the best that they can be. In 1965, my dad introduced me to organic gardening. Ahead of his time, his results with composting and sustainable agriculture was an inspiration. Healthy soil is good for plants, animals, and people. We have applied the principles of sustainable agriculture to insure a healthy, sustainable future for ourselves and the world we live in. In doing so, we strive to produce a wholesome artisanal farmstead cheese.

Our cheese comes from an old style stirred curd method. Our farmstead cheddar cheese has varying degrees of sharpness and flavor. Raw milk aged farmstead cheddar cheese is aged a minimum of 60 days. Located in the Allegheny Foothills, our farm offers an aged raw milk farmstead cheese with all the pure flavors and goodness of a truly unique farmstead grassfed cheese. By understanding the past we can improve our futures. The credit goes to the cows for the unique taste in grassfed farmstead cheese. But its our job to transform the milk into cheese while protecting the quality of the milk. Our goal is to create a delicious, wholesome farmstead cheese for a true “farm to table” experience. Preserving a lost art to create a “living food”.

Welcome to the farm that makes Colonial Classics Farmstead Cheese! It’s very rewarding for us to see our cows enjoying what cattle love the most…luscious, green pasture and fresh, clean, cool spring water. We provide this water to every pasture the cows graze. We know from experience, that cows live longer, healthier lives in an outdoor environment with plenty of exercise. And, it makes sense that if the animal is healthier…milk will be healthier. Farmstead cheese that is made from grassfed cows is best that it can get. We do not push our cows for production because quality is more important than quantity in our opinion. We produce a farmstead stirred-curd cheese with varying degrees of sharpness and flavors. Unique in its own right, farmstead cheese is artisanal in nor only the way that it is made, but the way the cows graze and the quality of milk that is used to make the farmstead cheese. It is interesting to watch cows graze. Some cows pick for certain grasses, while others are very indiscriminate. Their milk can sometimes have different constituents than other times, depending on the grasses they have consumed. The cows play a major role in producing a quality artisanal farmstead cheese and we appreciate what they do. The factors that go into an artisanal farmstead cheese is unique from one milking to another. Just like nature…there is never anything that is identical. One of a kind our grassfed, all natural farmstead cheese is a reflection of what our farm is all about…individuality. Our goal is to bring that unique, individual farmstead, grassfed cheese taste with all of the earthen elements and qualities to our customers. Colonial Classics Farmstead Cheese is versatile and can be enjoyed by itself or to enhance any recipe. It makes a delicious macaroni and cheese, grilled cheese, and one of my favorites, twice baked potatoes wit h melted cheese and onion. Great northern beans are also very delicious with melted farmstead cheese and a scoop of cottage cheese on the side topped with pepper. It’s time for dinner!
